Vegetable Kottu Roti
Vegetable Kottu Roti is a very popular street food in Sri Lanka. For foreigners visiting Sri Lanka for the first time, it might look like a kind of fried noodles, but actually it's not made from pasta but from bread, more precisely from chopped Godhamba Roti. Walking along the streets in Sri Lanka, you can sometimes hear a truly deafening kind of clattering coming from some diners. That's the sound of the chopping on the flat grill.
Traditionally, Kottu Roti was a local dinner made of leftovers. But the stalls and small restuarants now actually use fresh vegetables to prepare Kottu Roti for their guests. The photos are taken in Angel Kitchen in Ekala, which is at the road from Ja Ela to Minuwangoda.

Ingredients
chopped Godhamba Roti, big and very fine, made with coconut oil
2 eggs
4-5 Tbsp of coconut oil
spices:
3 pieces garlic, minced
small piece of ginger ginger, chopped
some curry leaves or curry powder
chili powder
fine-cut vegetables:
- 50 g green leaks (green parts)
- 50 g cabbage,
- 75 g carrots
4 capsicum
- salt and pepper, amount as you wish
2 eggs
4-5 Tbsp of coconut oil
spices:
3 pieces garlic, minced
small piece of ginger ginger, chopped
some curry leaves or curry powder
chili powder
fine-cut vegetables:
- 50 g green leaks (green parts)
- 50 g cabbage,
- 75 g carrots
4 capsicum
- salt and pepper, amount as you wish
Preparation
First mix the vegetables and stir fry them on the grill.
Add eggs, stir in the vegetables until scrambled and dry
Add the chopped Godhmaba Roti and mix
Chop again and intensely the mix of roti and vegetables.
Add the spices.
The Kotu Roti is ready to serve. Bon appétit!
